The most important JOURNEY is the one with YOURSELF!
This realization didn’t happen overnight—goodness, how I wish it had. Instead, it came about through years of daily struggles, love, heartache, successes, and failures, but most importantly, it came. We live in a world of so much busy-ness. We take care of everyone around us before we think of taking care of ourselves. We are cautious about everyone else’s feelings before prioritizing our own. We run around from appointments, calls, meetings, and projects all day long, often with very little attention to the present moment, how we feel, how we are FUELING our bodies and whether we are staying true to our purpose and goals.
As I progress through life, I want to look back and know with certainty that I showed up, was present, and was true to myself. I want to know that I took care of my body the absolute best way I knew how. I realize that to be able to be present, achieve my goals, and live with purpose, I must take care of my physical body. Which makes this journey I’m on with health and nutrition one of my favorites- I spend countless hours in the kitchen creating healthful, delicious recipes to fuel my body and to share with loved ones. Below is a super yummy, healthy and quick recipe for everyone on the go! Enjoy knowing that you are fueling your body with so much goodness to be able to ROCK YOUR JOURNEY!
THE PERFECT FUEL ACAI BOWL
Ingredients:
1 cup frozen blueberries
1 cup blackberries
1 ripe banana
1 cup unsweetened almond milk OR coconut water
1 tablespoon nut or seed butter ( I use almond butter)
1 ripe avocado
1 tablespoon coconut oil
3-4 tablespoons ACAI POWDER
Large handful of spinach
½ teaspoon raw organic honey
Toppings:
Fresh fruit, sliced (I use cucumber and strawberries)
Bee Pollen
Granola (optional)
Coconut Flakes
Hemp or Chia seeds
Directions:
Add all the ingredients in a good high power blender. Blend until smooth and creamy. Add more almond milk or coconut water to get blender running. Aim for frozen- yogurt consistency (thicker than a smoothie).
Spoon the Acai mixture into bowls and top off with any healthy yummy topping you desire! And ENJOY!
