Sometimes, we can feel like there’s nothing that can get us up, out, and going. We can try everything… upbeat music, inspirational post-its all over the house, cold showers, a walk around the neighborhood… And still, it can feel sooo hard. Our desires don’t necessarily match up with our body and mind. We get stuck in old patterns and habits; we wake up, drink coffee (make that extra strong, please!), stuff in our faces anything that’s easy, head to work, and end the day running tons of errands, not even really “doing” anything. Oh, and let’s not forget that glass (or two) of wine before bed to make us feel like adults who have “done” so much each day. Powerful Asparagus Soup
5 cups chopped Asparagus
1 yellow onion, roughly chopped
3 garlic cloves
1⁄4 teaspoon sea salt
1 tablespoon coconut Oil
1⁄2 cup Almonds
2 cups vegetable broth (low sodium, or make your own) Black Pepper to Taste.
Lightly saute the asparagus, yellow onion, and garlic in coconut oil in a saucepan. Add vegetable broth; cover and bring to a simmer. Cook until tender. Remove from heat. Transfer mixture to blender with only 1 cup of broth. Add all the remaining ingredients and blend until smooth. ENJOY, darlings!
